Benodigdheden voor 4 personen:
- 2 teentjes look- 1 aardappel- 1 wit van prei- 1 ui- 2 l water- 4 rucola's (raketsla)- 4 stukjes stokbrood- 4 schijfjes tomaat- 4 schijfjes mozzarella- PH Italian Mix- 1dl Alpro soya Cuisine- Alpro soya Bakken & Braden- 1 eetlepel PH Groentebouillon
Bereiding:
- Stoof de aardappelstukjes, de prei, de ui en de look tot ze mooi glazig zijn.
- Bevochtig dit alles met water en voeg er de bouillon aan toe.
- Laat het geheel 30 minuten koken en laat vervolgens afkoelen.
- Kook de raketsla gaar in gezouten water en spoel hem daarna onder koud water.- Mix alles samen heel fijn in de blender en voeg de Alpro soya Cuisine eraan toe.
- Snijd het stokbrood in sneetjes en schik op elk stukje een schijfje tomaat, een beetje fijngehakte look en een schijfje mozzarella.
- Breng op smaak met de PH Italian Mix en toast de broodjes in een oven van 180 graden.- Serveer de soep met de getoaste broodjes.
